Blooming tea is a style more often associated with China. Here it is made in Sri Lanka: artisans tie the leaves by hand into a compact bundle that unfolds as it steeps. It is sold by the piece, and every batch is lab-tested for purity.

Place a piece in a glass teapot or a large heatproof glass, pour over hot water and watch it open over a few minutes. A clear pot shows it off, which makes it a good tea to serve to guests or to give as a gift.
