Description

True Ceylon cinnamon quills from Kandy Estate in Kandy, Sri Lanka. We buy farm-direct from named estates, never from anonymous exporters, so every harvest can be traced back to the estate it grew on.

The bark is peeled by hand into quills and dried on traditional racks on the estate. We offer two grades, Alba and C5. Ceylon cinnamon is a different spice from cassia, the common supermarket "cinnamon": its quills are thin, layered and crumbly, and the flavour is milder, sweeter and more delicate. It is also naturally low in coumarin compared with cassia, and every batch is lab-tested for purity and coumarin content.

Stir a stick into tea or coffee, simmer one in curries, rice or mulled drinks, or grind it fresh when a recipe calls for powder.
